New Year'S Day Soup - cooking recipe

Ingredients
    1 c. diced smoked lean ham
    2 celery ribs, chopped
    1 medium onion, chopped
    2 carrots, chopped
    2 garlic cloves, minced
    2 (15 oz.) cans undrained black-eyed peas
    2 (14 1/2 oz.) cans low-sodium, fat-free chicken broth
    2 (14 1/2 oz.) cans no-salt added stewed tomatoes (undrained)
    1 (14 1/2 oz.) can no-salt added diced tomatoes (undrained)
    1 (8 oz.) can tomato sauce
    1 1/2 c. fresh spinach
    1/2 c. fresh parsley
    1/2 Tbsp. pepper
Preparation
    Saute ham, celery, onion, carrots and garlic in Dutch oven until tender. Stir in black-eyed peas, chicken broth, stewed tomatoes, diced tomatoes and tomato sauce. Bring to a boil. Cover, reduce heat and simmer 1 hour and 30 minutes. Stir in spinach, parsley and pepper.
