Chicken Curry And Green Rice - cooking recipe

Ingredients
    1/4 c. plus 2 Tbsp. butter or margarine
    1/2 c. onion, minced
    1 Tbsp. curry powder or to taste
    1/4 c. plus 2 Tbsp. flour
    1 1/2 tsp. salt
    1 1/2 tsp. sugar
    1/4 tsp. ground ginger
    2 c. chicken broth or dissolved bouillon cubes
    2 c. milk
    4 c. cooked chicken, cubed or shredded (may substitute cooked, cleaned shrimp)
    1 tsp. lemon juice
Preparation
    Melt butter in heavy saucepan over medium heat.
    Saute onion and curry; blend in flour and seasonings.
    Cook on low until thick and bubbly, as for white sauce.
    Remove from heat; stir in broth and milk.
    Bring to a boil, stirring constantly.
    Boil 1 minute. Add chicken and lemon juice.
    Heat, but do not boil.
    Serves 8.
