Make Ahead Mashed Potatoes - cooking recipe

Ingredients
    potatoes
    margarine or butter
    shredded Cheddar cheese
    milk
    sour cream
Preparation
    Cook potatoes so they
    will be done about an hour ahead of eating time.
    Mash while hot, cutting in a stick of margarine or butter.
    Add enough milk to give a creamy texture, then blend in well a cup of sour cream for every 10 potatoes.
    Spoon into a casserole dish and top with shredded Cheddar.
    Cover and set aside on stove.
    About 20 minutes before eating, slip casserole dish into oven to melt cheese and re-warm potatoes.
