Candied Yams - cooking recipe
Ingredients

5 c. red or orange sweet potatoes (Centennials are Bill's favorite)
1/2 c. white sugar
1/3 c. brown sugar
cinnamon
1/4 stick margarine
Preparation

Peel jumbo potatoes and dice into small pieces about the size of the end of your finger until you have 5 measuring cups of raw potatoes.
After cooking, you will end up with about 4 cups.
Save liquid in pot.
Place potatoes in oven-safe dish, adding white sugar between layers.
Top with brown sugar, a sprinkling of cinnamon (as desired) and margarine.
Pour liquid from pot on top of potatoes until they are barely covered.
Place in oven and bake for 20 minutes at 350\u00b0.
