Chicken Brown Rice Primavera - cooking recipe
Ingredients

1 Tbsp. oil
1/4 lb. boneless, skinned chicken breasts, cut into strips
2 cloves garlic, minced
1 1/2 c. chicken broth
1 c. broccoli flowerets
1/2 red pepper, cut into strips
1/2 c. diagonally sliced carrots
1/2 c. sliced yellow squash
1/4 tsp. pepper
1 1/2 c. Minute instant brown rice, uncooked
1/2 c. grated Parmesan cheese
Preparation

Heat oil in large skillet on medium-high heat.
Add chicken and garlic.
Cook and stir until chicken is lightly browned.
Add broth, broccoli, red pepper, carrots, squash and pepper.
Bring to boil.
Stir in rice.
Return to boil.
Reduce heat to low; cover and simmer 5 minutes.
Remove from heat.
Let stand 5 minutes. Stir in cheese.
Makes 4 servings.
