Skillet Potatoes - cooking recipe

Ingredients
    3 Tbsp. butter or margarine
    1 c. sliced celery
    1/2 c. chopped onion
    2 cloves garlic, minced
    1 (10 3/4 oz.) can condensed chicken broth
    1/4 c. water
    4 c. cubed potatoes
    1 c. julienne strip carrots
    1/8 tsp. pepper
Preparation
    In 10-inch skillet over medium heat, melt butter.
    Add celery, onion and garlic until tender.
    Add broth, water, potatoes, carrots and pepper.
    Heat to boiling; reduce heat to low.
    Cover and simmer 15 minutes until potatoes are tender.
    Uncover and simmer over medium heat until broth is slightly thickened; stir often.
    Garnish with parsley before serving.
    Makes 5 cups.
