Genuine Southern Fried Chicken - cooking recipe

Ingredients
    1 (3 1/2 lb.) chicken, cut up
    3 tsp. salt, divided
    vegetable oil
    1/4 c. butter or margarine
    3/4 c. flour
    1/2 tsp. ground pepper
Preparation
    Sprinkle chicken with 2 teaspoons of salt.
    Place on platter. Cover with wax paper and refrigerate overnight or at least 4 hours.
    Pour 1-inch of oil into large, deep, heavy skillet.
    Add butter and heat over medium-high heat at 375\u00b0.
