Sweet Potato Pie - cooking recipe

6 large sweet potatoes
1/2 c. salt free soft butter
3 large eggs, room temperature
1 c. sugar (granulated)
1/4 tsp. nutmeg
2 deep 9-inch pie shells
Preparation

Wash potatoes and put in a large cook pot; cover with water and boil (add water as needed to keep covered) about 40 minutes or until done.
Drain and let cool.
When cool, peel and coarsely chop into large bowl.
Mash well and add all ingredients.
Mix well to blend.
Pour into shells.
Bake 15 minutes in a 425\u00b0 preheated oven, then for 40 minutes in a 350\u00b0 oven until filling is set and a knife inserted comes out clean.
Cover crust with foil if edges start to brown too fast.
Makes two 9-inch pies. Freeze any leftover batter.
