Baked Zucchini With Tomatoes - cooking recipe
Ingredients

3 medium zucchini (about 3/4 lb.)
3 ripe plum tomatoes (about 1/3 lb.)
1 medium green pepper, seeded and chopped
1/2 c. finely chopped onions
2 tsp. finely chopped garlic
2 tsp. finely chopped marjoram or 1 tsp. dried
freshly ground black pepper
2 Tbsp. each: olive oil and freshly grated Parmesan cheese
Preparation

Heat oven to 425\u00b0.
Trim zucchini and core the tomatoes.
Cut each into equal horizontal slices.
Arrange in ovenproof baking dish with the edges slightly overlapping, alternating layers of zucchini and tomatoes.
Put green pepper, onions, garlic, marjoram and pepper to taste in mixing bowl.
Blend well and scatter over zucchini and tomatoes.
Sprinkle with the olive oil and Parmesan cheese.
Bake 20 to 25 minutes or until lightly browned.
