Sweet Potato Souffle - cooking recipe
Ingredients

4 c. yams (fresh or canned), hot boiled
4 Tbsp. butter or margarine
1/4 c. honey
1 egg yolk
1 c. orange juice or milk
2 Tbsp. brown sugar
1/2 tsp. mace
1/4 tsp. nutmeg
1 tsp. salt
2 egg whites
Preparation

Mash the cooked yams while hot.
Stir in the butter, honey and beaten egg
yolks.
Beat the mixture until fluffy.
Mix the orange juice or milk with the brown sugar, nutmeg, mace and salt.
Add it slowly to the yam mixture, beating constantly.
Beat the egg whites until very stiff and fold them gently into yam mixture. Pour into buttered casserole and bake in a preheated oven at 300\u00b0 for 30 to 35 minutes or until light brown and well puffed.
