Ingredients

3 c. skim milk
1 Tbsp. honey
3/4 c. enriched long grain rice
1 tsp. vanilla
3/4 c. seedless raisins
1/2 c. sliced strawberries
1/2 tsp. nutmeg
1 oz. walnuts
Preparation

In a large saucepan, mix milk and honey.
Stir and cook over medium heat until honey dissolves.
Add rice, vanilla and raisins. Turn heat to high; stir until mixture comes to a boil.
Reduce heat to medium-low; partially cover pan.
Heat for 20 minutes or until rice is cooked, stirring every 5 minutes.
Serve hot or cold, sprinkled with nutmeg and garnished with strawberries and walnuts.
Makes 4 servings.
