Chicken Breasts In Many Mustards - cooking recipe

Ingredients
    4 half breasts of chicken, boned and skinned
    1/2 c. each: Dijon mustard, old-style (or whole seed) mustard, German mustard, distilled white vinegar, olive oil
    1/2 c. unsweetened apple juice
    juice of 1/2 lemon
    1 whole shallot, sliced into rings
    freshly ground pepper
Preparation
    Set chicken breasts aside.
    Mix all remaining ingredients in bowl with a whisk to emulsify.
    Marinate chicken 2 to 4 hours in mustard mixture.
    Grill or cook chicken.
