Pinehurst Muffins(From Plaza Club) - cooking recipe

Ingredients
    1 3/4 c. flour
    1 1/2 tsp. cinnamon
    1/2 tsp. salt
    1 c. sugar
    1 1/2 tsp. baking soda
    3 eggs
    1/2 tsp. vanilla
    3/4 c. oil
    1/2 c. raisins
    1/2 c. pecans
    1 3/4 c. carrots, shredded
    1/2 c. coconut
    1 c. apple, shredded
Preparation
    Sift together flour, cinnamon, salt, sugar and baking soda. Mix well eggs, vanilla and oil.
    Add raisins, pecans, carrots, coconut and shredded apple to egg mixture.
    Add dry ingredients, a little at a time.
    Place in greased muffin tins/paper cups. Bake at 350\u00b0 for 5 to 10 minutes, or until an inserted toothpick comes out clean.
    Yields approximately 18 muffins.
