Savory Spinach Souffle - cooking recipe
Ingredients

1/3 c. shredded Parmesan cheese
3 Tbsp. sliced green onion
1/4 c. margarine or butter
1/4 c. flour
1 c. milk
1/2 tsp. salt
1/8 tsp. pepper
dash of nutmeg
4 eggs, separated
1 (15 oz.) can spinach, drained or 1 large bunch or bag fresh spinach
Preparation

Grease 1 1/2-quart souffle dish or casserole; coat with 2 tablespoons cheese.
In saucepan, saute onion in margarine. Blend in flour.
Add milk, salt, pepper and nutmeg.
Cook, stirring constantly until thickened.
Stir in remaining cheese. Add egg yolks, one at a time, beating after each addition.
Blend in spinach.
Cool.
Beat egg whites until stiff but not dry.
Fold into spinach mixture.
Pour into prepared dish.
Bake in 375\u00b0 oven 35 minutes.
Serve immediately.
