Tabooleh With Feta Cheese - cooking recipe

Ingredients
    1 large cucumber, peeled
    1 c. bulghur
    2 large bunches parsley
    2 medium tomatoes
    1 bunch scallions
    1/2 bunch fresh mint
    juice of 2 lemons
    1/2 c. olive oil
    1/2 sq. Feta cheese or to taste, cut or broken into tiny pieces
Preparation
    Soak bulghur in water for 1/2 hour.
    Chop scallions, parsley, mint, cucumber and tomatoes very fine.
    Drain bulghur and add. Serve with Syrian bread.
