Apple Ring Cucumber Pickles - cooking recipe

Ingredients
    1 gal. cucumbers, peeled, seeded and sliced
    1/2 c. pickling lime
    1 c. vinegar
    1 Tbsp. red food coloring
Preparation
    Place cucumbers in a crock and add pickling lime and enough water to cover cucumbers.
    Let stand 24 hours.
    Drain and soak 2 hours in clear cold ice water.
    Drain.
    Mix vinegar, red food coloring and enough water (in pan) to cover cucumbers.
    Simmer for 2 hours.
    Drain.
