Carrot Ring - cooking recipe
Ingredients

3 c. finely shredded fresh carrots
1/3 c. finely diced celery
1 tsp. finely chopped onion
1/2 c. fine dry bread crumbs
1 c. shredded Cheddar cheese
1 1/2 c. medium white sauce
3/4 tsp. salt
1/8 tsp. pepper
3 eggs, separated
1 c. cooked peas
12 small onions
Preparation

Combine first 8 ingredients.
Beat egg whites until they stand in soft, stiff peaks.
Fold egg whites into carrot mixture.
Pour into well-greased 1 1/2-quart ring mold.
Place in pan of hot water.
Bake at 325\u00b0 for 1 1/4 hours.
Remove from oven and let stand for 10 minutes.
Turn onto serving plate.
Fill center with cooled peas and onions, or any other desired vegetable.
Makes 8 servings.
