Apple-Cheddar Muffins - cooking recipe
Ingredients

1 3/4 c. all-purpose flour
1/2 lb. apples, cored, pared and finely chopped
1/2 c. rye flour
1/4 c. Cheddar cheese, shredded
1/4 c. sugar
2 Tbsp. dark raisins
2 Tbsp. baking powder
1/4 tsp. allspice or cinnamon
1/2 c. skim milk
1/3 c. plus 2 tsp. margarine
1/4 c. egg substitute
Preparation

Preheat oven to 375\u00b0.
Combine first 9 ingredients in a medium mixing bowl.
Stir to combine and set aside.
In blender, combine remaining ingredients and process until smooth.
Pour into dry ingredients and stir until moistened (do not beat or overmix). Prepare muffin pan.
Fill each cup with an equal amount of batter (each will be about 3/4 full).
Bake in middle of center oven rack for 20 minutes.
Cool and serve.
Great for breakfast or as part of a light lunch.
Makes 12 servings.
