Cold Rice With Shrimp - cooking recipe

Ingredients
    1 c. raw rice
    3 scallions
    1 bunch chives
    1/2 onion
    1 1/2 c. cooked, cleaned shrimp (small to medium)
    1 c. mayonnaise
    pinch of ginger
    salt and lemon juice to taste
    lettuce
    sesame seed, toasted
Preparation
    Cook rice according to package directions and cool.
    Chop scallions, chives and onion fine.
    Add to the cold cooked rice. Add the shrimp and mayonnaise.
    Season to taste with the ginger, salt and lemon juice and refrigerate until serving time.
    Heap on lettuce and garnish with sesame seed.
