New Potatoes In Basil Butter - cooking recipe

Ingredients
    1 1/2 lb. new potatoes
    1 large sprig basil
    4 oz. butter
    4 Tbsp. chopped basil
    salt and pepper to taste
    basil sprigs (to garnish)
Preparation
    Place potatoes in a saucepan of cold water with the sprig of basil.
    Bring to boil, then cover and simmer until potatoes are tender.
    Drain and remove basil.
    Melt butter in a pan; add chopped basil and cook for 30 seconds, stirring, taking care not to brown the butter.
    Toss the potatoes in the butter; spoon into serving dish and garnish with basil sprig.
    Serve immediately.
    Serves 4. Essential to use fresh basil or half a jar of pesto.
