Spinach Cakes(A Caribbean Recipe) - cooking recipe

Ingredients
    8 oz. spinach leaves
    1 egg
    1/2 tsp. white pepper
    up to 1/2 c. milk
    1 Tbsp. chopped onions
    1/2 tsp. salt
    1/2 c. breadcrumbs
    1/2 c. flour
    1/2 tsp. baking powder
    2 Tbsp. margarine, melted
Preparation
    Wash spinach leaves after removing stems and chop finely.
    Beat egg in a mixing bowl.
    Add onion, melted margarine and spinach. Sift in flour, bread crumbs, salt and baking powder; blend well. Add some milk to make mixture just firm enough to drop from a spoon.
    Heat oil in a deep fryer or a suitable skillet.
    Drop mixture in hot fat by the spoonful and cook until golden.
