Turkey Pasta Sauce - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 medium onions, chopped
    3 carrots, chopped
    3 stalks celery, chopped
    1 lb. turkey Italian sausage (we use Diestel sausage, available at Pure Sausage and Meat on Pershing)
    1 lb. ground turkey
    1/2 c. red or white wine (optional)
    2 (28 oz.) cans tomatoes
Preparation
    Saute chopped vegetables in olive oil in a large pot on medium-high heat for about 10 minutes.
    Add turkey sausage and turkey and crumble; cook at medium heat, crumbling turkey and stirring until turkey loses pink color.
    If using wine, add wine and cook at medium-high heat until most of wine liquid has evaporated.
    Add the tomatoes (chop some of the tomatoes in the pot with a spatula, if whole) and lower heat to keep simmering.
    Simmer one or two hours.
    Serve over your favorite pasta.
    More than enough sauce for one pound of pasta.
