Carrot Meatballs - cooking recipe

Ingredients
    1 lb. lean ground beef
    2 large carrots, shredded (1 c.)
    1 small onion, chopped (1/3 c.)
    1/2 c. bread crumbs
    1 egg
    1/4 c. milk
    1 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. oil
    1 (10 1/4 oz.) can beef gravy
Preparation
    Mix in bowl beets, carrots, onion, egg, milk, salt and pepper. Shape in 1 1/2-inch meatballs. Heat oil in large skillet and brown meatballs. Add gravy. Cover and simmer 15 minutes or until meatballs are done. If desired, serve over noodles or rice. Yields 4 servings.
