Beet Pickles - cooking recipe

Ingredients
    quantity of small beets
    2 c. water
    1 lemon, sliced thin (optional)
    1 tsp. cloves
    2 c. sugar
    2 c. vinegar
    1 Tbsp. cinnamon
    1 tsp. allspice
Preparation
    Pare, slice and cook beets.
    Place in jars.
    Make pickling syrup by combining rest of ingredients.
    Put cinnamon, cloves and allspice in a bag.
    Bring syrup to a boil and simmer a few minutes to allow spices to be absorbed.
    Pour hot syrup over beets.
    Seal.
