Minestrone(Italian Soup) - cooking recipe

Ingredients
    6 c. water
    1 1/4 c. (about 1/2 lb.) navy beans
    1/4 lb. salt pork
    3 Tbsp. olive oil
    1 small onion, chopped
    1 clove garlic, chopped
    2 stalks celery
    2 small carrots, scraped
    1 medium potato
    1/4 head cabbage
    1 Tbsp. chopped parsley
    1/2 tsp. salt
    1/4 tsp. pepper
    1 qt. hot water
    1/4 c. precooked rice
    1/2 c. frozen peas
    1/4 c. tomato paste
    grated Parmesan cheese
Preparation
    Heat 6 cups of water to boiling in a large saucepan. Gradually add navy beans to boiling water.
    Simmer 2 minutes and remove from heat.
    Set aside to soak, about 1 hour.
    Add salt pork to beans.
    Return to heat and simmer one hour.
