Fried Rice - cooking recipe

Ingredients
    2 c. uncooked rice
    3 eggs
    1 medium onion
    soy sauce
    choice of pork, chicken, ham or shrimp
    2 tsp. salt
    1 tsp. pepper
    1 3/4 c. water
    1 pkg. frozen peas and carrots
Preparation
    Cook rice with water on medium heat until all water is gone. Turn to low.
    Stir the rice.
    Cover for 15 to 20 minutes; set aside.
    Beat eggs, one at a time; fry in large skillet with 1 tablespoon of butter.
    Cut into strips and set aside.
    Chop onion; fry in small amount of oil until it is clear.
    To this, add the chopped meat of choice and cook until the meat is done.
    Set aside.
