Zucchini Cake - cooking recipe

Ingredients
    1 1/2 c. sugar
    1 c. margarine
    1 tsp. vanilla
    2 large eggs
    2 1/2 c. flour
    1/2 c. sour cream
    1/3 c. cocoa
    1 tsp. baking soda
    2 c. shredded zucchini
    1 c. chocolate chips (mint is great!)
Preparation
    Cream sugar, margarine, vanilla and eggs. Beat on high 5 minutes. Add flour, sour cream, cocoa, baking soda and salt. Beat on low until combined. Scrape bowl and beat 1 minute on medium. With spatula, fold in zucchini and chips. Spread batter (will be thick) in greased 13 x 9-inch pan. Bake 40 to 45 minutes at 350\u00b0. Makes 12 servings (505 calories each).
