Corn Pone Muffins - cooking recipe
Ingredients

2 Tbsp. butter
1 1/2 c. plain corn meal
1 c. plain flour
1 tsp. salt
1 tsp. double acting baking powder
1 c. milk
2 beaten egg whites
dash of cayenne pepper
Preparation

Heat oven to 425\u00b0.
Melt 2 tablespoons butter, let cool. Sift meal,
flour,
baking powder and pepper into mixing bowl. Add butter
and
milk
to dry ingredients.
Fold in beaten egg whites and bake until golden brown.
Heat greased muffin tin in oven for a few minutes before filling with batter.
Bake 15 to 20 minutes until golden brown.
