Chicken And Wild Rice Salad - cooking recipe

Ingredients
    4 oz. wild rice
    3 large boneless chicken breasts, cooked and cubed
    1 large tart apple, unpeeled and chopped
    1/3 small red onion, minced
    1/2 large red pepper, diced
    1/2 c. dried currants
    1/2 c. celery, diced
    1/2 c. toasted pecan pieces
    2 Tbsp. balsamic vinegar
    2 Tbsp. olive oil
    salt and pepper to taste
Preparation
    Cook rice according to package directions.
    Combine all ingredients.
    May be served hot or cold.
    (I prefer cold.)
