Potato Pie(Recipe Can Be Divided For Smaller Portions) - cooking recipe

Ingredients
    5 lb. potatoes, peeled
    1 (16 oz.) pkg. Mozzarella cheese, cubed
    6 to 8 large eggs
    approximately 1/4 c. grated Parmesan cheese
    salt and pepper
    bread crumbs for topping
Preparation
    Boil peeled and quartered potatoes in salted water until tender.
    Drain and replace in pot.
    Allow to cool for 5 to 10 minutes.
    Mash potatoes together, adding eggs, one at a time.
    Add enough eggs, until mixture has a yellow tint.
    Stir in salt, pepper and grated cheese to taste.
    Fold in cubed Mozzarella.
