Crawfish Etouffee - cooking recipe
Ingredients

1 to 1 1/2 sticks margarine
1/2 Tbsp. flour
1 medium onion, finely chopped
2 to 3 Tbsp. green pepper, finely chopped
2 to 4 garlic pods, finely chopped
1 lb. crawfish tails
2 tsp. parsley (fresh or dried)
1 tsp. salt and pepper or to taste
1 tsp. cayenne pepper or to taste
cooked rice
Preparation

Melt margarine in a large skillet. Add flour and stir until blended. Add onion, green pepper and garlic. Cook until tender. Add crawfish and cook about 10 minutes, stirring occasionally.
It may even take 15 to 20 minutes to cook. Add spices.
Cover and simmer until seasonings are blended (very low heat).
Serve over rice.
