Portuguese Eggs - cooking recipe
Ingredients

8 hard-boiled eggs
1 can stewed tomatoes
4 Tbsp. butter
pinch of parsley, chives and basil
2 Tbsp. flour
1/2 c. tomato juice
1 c. milk, scalded
1/2 c. Cheddar or Gruyere cheese, grated
2 Tbsp. butter
Preparation

Cut eggs in half lengthwise.
Put yolks in bowl and thoroughly blend with 4 tablespoons butter, herbs, salt and pepper to taste. Spoon the mixture into the egg whites.
Spread tomatoes over the bottom of a baking dish and place stuffed eggs on them.
Melt 2 tablespoons butter and stir in the flour.
Cook and stir for 3 minutes.
Add the tomato juice and milk.
Stir and cook until smooth and thick.
Pour around and over the eggs.
Sprinkle with cheese and bake at 350\u00b0 for 20 to 25 minutes until brown and bubbly.
