Caribbean Beans And Rice - cooking recipe

Ingredients
    2 c. long grain rice
    2 (15 oz.) cans coconut milk
    1 (16 oz.) can pidgeon peas
    1 tsp. red peppers, crushed
    1 tsp. salt
    1/2 tsp. pepper
    1 clove garlic
    1 scallion, chopped
Preparation
    Place all ingredients except for peas in a large pot.
    Bring to a boil.
    Turn heat to low to medium and simmer, 20 to 30 minutes or until liquid is absorbed.
    Mix in peas.
    Heat 2 to 3 minutes and serve.
