Bean And Canadian Bacon Soup - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 carrot (1/2 c.), diced
    1 small onion (1 c.), diced
    4 oz. Canadian bacon, diced
    1 c. dry Great Northern beans
    3 c. chicken broth
    1/4 tsp. oregano
    2 bay leaves
    salt and pepper to taste (white pepper)
Preparation
    Heat oil; add carrot and onion and saute about 5 minutes.
    Add bacon; saute 5 minutes longer.
    Add beans, broth, oregano and bay leaves.
    Bring to boil; reduce and simmer, covered, until beans are tender, about 1 1/2 hours.
    Season to taste with salt and pepper.
    Remove bay leaves before serving.
    Preferable to refrigerate soup a day before serving.
