Old Fashioned Pot Roast - cooking recipe

Ingredients
    4 lb. beef (middle chuck cut)
    3 onions, diced or sliced
    4 cloves garlic, minced
    1 carrot, sliced
    1 stalk celery, diced
    1 green pepper, diced
    3 Tbsp. bacon drippings
    2 Tbsp. salt
    1 tsp. paprika
    4 bay leaves
    10 peppercorns
    1 small dry red pepper
    1 1/2 c. tomato juice
    2 Tbsp. brown sugar
Preparation
    Heat in heavy pot and braise the meat until evenly browned on all sides.
    Add remaining ingredients in the order listed.
    Cover and simmer 2 hours.
    Strain gravy and thicken to taste.
    Slice when tender; serve with gravy.
    Makes 8 to 10 servings.
