Fresh Spring Pea Soup - cooking recipe

Ingredients
    1 Tbsp. butter (or a couple of onions diced in salt pork)
    1 c. small potato, diced
    3 c. chicken broth
    1 c. freshly shelled green peas (or frozen)
    1 Tbsp. chopped chives or scallions
    salt and black pepper to taste
Preparation
    Melt the butter (or brown the pork).
    Saute the diced potato for a couple of minutes.
    Add chicken broth and simmer until potatoes are soft (about 20 minutes).
    Bring to a boil and add the green peas.
    As soon as peas are tender, stir in chives and serve immediately.
