Calico Squash Casserole - cooking recipe

Ingredients
    1 lb. yellow squash, sliced
    1/2 lb. zucchini, sliced
    1 c. water
    1/2 c. chopped onion
    1/4 c. chopped green pepper
    3 Tbsp. chopped green onion
    1/4 c. margarine, melted and divided
    1 c. herb stuffing mix
    1 c. cream of chicken soup
    1 (8 oz.) can water chestnuts
    1/2 c. plain low-fat yogurt
    1/2 c. chopped pimento
    1 Tbsp. margarine
    1 large carrot, grated
    1/4 tsp. pepper
    1/2 tsp. salt
Preparation
    Boil for 8 minutes the first 3 ingredients.
    Drain.
    Saute both pepper and onions in one tablespoon margarine.
    Combine stuffing and other margarine.
    Reserve 1/3 cup of mixture.
