Sweet Potato Caramel - cooking recipe
Ingredients

4 medium sweet potatoes, peeled
1 c. sugar
1 Tbsp. finely chopped ginger
1 Tbsp. grated orange rind
2 Tbsp. butter
Preparation

Cut potatoes in 1/4-inch thick slices; deep fry until golden brown.
Layer bottom of baking dish with potatoes.
In saucepan, add butter and sugar with a little water.
Completely melt.
Add ginger and orange rind.
Cook until caramelized.
Dip fork into this mixture and drizzle over potatoes.
It's very good in the winter when it snows outside!
