Mrs. Lou Holtz'S Spinach Squares - cooking recipe

Ingredients
    2 (10 oz.) pkg. chopped frozen spinach
    3 Tbsp. butter or oleo
    1 medium onion, chopped
    1/4 lb. mushrooms, sliced
    4 eggs, beaten
    1/4 c. fine bread crumbs
    1 (10 1/2 oz.) can cream of mushroom soup
    1/4 c. grated Parmesan cheese (divided use)
    1/8 tsp. oregano
    1/8 tsp. basil
    1/8 tsp. black pepper
Preparation
    Place spinach in strainer.
    Rinse under hot water to thaw. Then press out all water.
    Melt oleo in skillet.
    Add mushrooms and onions.
    Cook on medium heat until onions are limp.
    In separate bowl, combine eggs, bread crumbs and mushroom soup with 2 tablespoons of the Parmesan cheese, the spinach and seasonings. Blend in the onion-mushroom mixture.
    Place into 9-inch square pan.
    Sprinkle remaining cheese on top.
    Bake, uncovered, for 35 minutes or until set in a 325\u00b0
    oven.
    Cut in squares to serve hot or refrigerate and cut smaller for cold hors d'oeuvres.
