Santa Fe Chicken - cooking recipe

Ingredients
    1 1/4 lb. or 3 large chicken breasts, cut into strips
    1 tsp. paprika
    1 tsp. salt
    2 or 3 Tbsp. oil
    1 to 2 c. Monterey Jack cheese, grated
    1 small green pepper, chopped
    1 can Ro-Tel tomatoes
    1 1/2 c. Minute rice, uncooked
    1/4 tsp. pepper
    1 medium onion, chopped
    1 clove garlic, minced
    1 c. chicken broth
Preparation
    Sprinkle chicken with paprika, salt and pepper.
    In a large skillet, brown chicken strips. Add onion, green pepper and garlic. Cook until tender. Add tomatoes and chicken broth.
    Bring to a boil.
    Add rice, then remove from heat and cover.
    Let set until all liquid is absorbed.
    Sprinkle with cheese.
