Cheese Souffle - cooking recipe
Ingredients

1 c. chopped or 3/4 c. grated cheese
2 Tbsp. butter
3 Tbsp. flour
1 c. milk
3 eggs
1/2 tsp. salt
dash of cayenne or white pepper to taste
Preparation

Make a white sauce of flour, butter, seasoning and milk.
Add cheese and cook until cheese melts.
Add egg yolks and stir well. Let cool.
When ready to bake, beat egg whites until stiff and fold into the cheese mixture.
Pour into well-buttered baking pan. Cook at 300\u00b0 for 30 to 45 minutes.
