Pineapple Bran Bread - cooking recipe

2/3 c. pineapple syrup
2/3 c. whole bran
2 c. sifted enriched flour
1/2 c. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1/2 c. walnuts, chopped
1/2 c. crushed pineapple, canned (drained)
1 egg, beaten
2 Tbsp. shortening, melted
Preparation

Measure pineapple syrup and add water if necessary to make 2/3 cup.
Pour over bran and let stand 15 minutes.
Mix and sift flour, sugar, baking powder, baking soda and salt.
Add walnuts, crushed pineapple, egg and melted shortening to bran mixture and add to sifted dry ingredients.
Mix until just blended.
Turn into greased loaf pan, 9 x 5 x 3-inch.
Bake at 325\u00b0 for 1 hour and 15 minutes.
