Mexican Cornbread - cooking recipe
Ingredients

2 c. cornmeal (self-rising)
1 c. flour (self-rising)
1/4 tsp. salt
1/2 tsp. baking soda
1 c. buttermilk
1/2 c. oil
3 eggs, beaten
1 can cream-style corn
1 large bell pepper, chopped
1 large onion, chopped
4 to 6 jalapeno peppers, chopped
1 lb. sharp Cheddar cheese, grated
Preparation

Combine first 8 ingredients until dry ingredients are moistened.
Add next 3 ingredients.
Preheat a 9 x 13-inch oiled baking dish.
Pour 1/2 batter into dish and sprinkle with 1/2 of cheese.
Pour remaining batter over this and sprinkle remaining cheese on top.
Dot with butter or margarine.
Bake at 350\u00b0 for 45 minutes or until done.
