Carrot 'N Crumb Cake - cooking recipe
Ingredients

45 Nilla wafers, finely rolled (about 2 c. crumbs)
1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1 1/4 c. Planters peanut oil
1/2 c. granulated sugar
4 eggs
1 1/2 c. grated raw carrots
1/2 c. Planter's pecan pieces, chopped
confectioners sugar
Preparation

In a medium bowl, combine Nilla wafer crumbs, flour, baking powder, baking soda, salt, cinnamon, cloves and nutmeg; set aside. In a large bowl, with electric mixer at medium speed, blend Planters peanut oil and sugar.
Add eggs, one at a time, beating well after each addition.
Gradually add flour mixture, beating well.
Stir in carrots and Planters pecan pieces.
Pour into well greased and floured 9 cup fluted tube pan.
