Helen'S Zucchini Bread - cooking recipe
Ingredients

3 eggs, lightly beaten
1 c. salad oil
1 c. sugar
2 c. zucchini, grated and drained
2 tsp. vanilla
2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
2/3 c. raisins
1 c. nuts, chopped
Preparation

Mix first 5 ingredients.
Stir together dry ingredients. Combine with zucchini mixture.
Add raisins and nuts.
Bake in 2 well-greased loaf pans at 350\u00b0 for about 1 hour.
Cool 10 minutes. Remove from pan.
You may substitute 1/2 cup coarse bran for 1/2 of the flour, if desired.
