Carrot Relish Or Copper Pennies - cooking recipe
Ingredients

2 lb. carrots, cooked without salt, sliced and drained
1 small onion, sliced thin
1 green pepper, diced
1 (10 1/2 oz.) can tomato soup
1 c. sugar
1/2 c. vinegar
1 tsp. dry mustard
1 tsp. salt
1/2 tsp. pepper
Preparation

Mix first three ingredients.
Bring remaining ingredients to a boil.
Pour the hot marinade over the carrots, onion and pepper. Chill.
Will keep for several weeks in refrigerator.
