Hearty Potato Soup - cooking recipe

Ingredients
    6 medium potatoes
    2 carrots, diced
    2 qt. water
    1 onion, chopped
    6 Tbsp. margarine
    6 Tbsp. flour
    1 tsp. salt
    1/2 tsp. pepper
    1 1/2 c. milk
Preparation
    Cook potatoes, carrots and celery in water until tender. Drain; save liquid.
    Put vegetables in separate dish.
    In the same pan, saute onions in butter.
    Stir in flour, salt and pepper. Gradually add milk, stirring constantly, until thickened.
    Gently stir in cooked vegetables.
    Add one cup or more of reserved cooking liquid until soup is desired consistency.
    Makes 2 1/2 quarts, 8 to 10 servings.
