Em'S Chocolate Cake - cooking recipe

1/2 c. cocoa
1 c. hot water
2 c. flour
2 c. sugar
1/2 tsp. salt
2 1/2 tsp. baking soda
1 c. buttermilk
1/2 c. Wesson oil
2 eggs, unbeaten
1 tsp. vanilla
Preparation

Cook the 1/2 cup cocoa and hot water until thick and cool. Sift the flour, sugar, salt and baking soda together into a large mixing bowl.
Mix the buttermilk, oil and eggs in a small bowl, then pour into dry ingredients. Add the vanilla and cocoa mixture. Stir with a large whisk.
Pour into a 13 x 9 x 2-inch pan or two 8 x 8 x 2-inch pans. Bake at 325\u00b0 for 40 minutes. Freezes well.
