Banana Oatmeal Muffins - cooking recipe
Ingredients

1/2 c. uncooked oats, quick and regular
1/2 c. milk
1 c. unsifted flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. nutmeg
1/4 c. butter, melted
1 egg
1 c. mashed ripe bananas
1/2 c. unsalted sunflower seeds or raisins (optional)
Preparation

In a medium bowl, combine oats and milk.
Set aside until milk is absorbed.
In a medium bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
Add butter, egg and bananas to oat mixture.
Add to dry ingredients and stir until moistened.
Stir in seeds or raisins.
Fill greased 2 1/2-inch muffin pans or paper cups 2/3 full.
Bake in a preheated 425\u00b0 oven for 15 minutes or until tester comes out clean.
Makes 12.
