Smoked Oyster Frittata - cooking recipe
Ingredients

4 to 6 smoked oysters
2 cloves garlic, minced
1/4 tomato
2 eggs, well beaten with 2 Tbsp. milk
2 green onions, chopped (save greens)
dash of Tabasco sauce
1/2 c. spinach, torn into bite size pieces
1/2 c. grated Gruyere cheese
Preparation

Dice the oysters.
Remove the seeds from the tomato and dice. Add spinach to egg mixture.
Melt 2 tablespoons butter in skillet. Add spinach mix and green onions.
Sprinkle oysters evenly over spinach mix. Top with cheese.
Cook over low heat until set. Top with tomato and onion tops. Serves 1.
